U.S. Chickpea Blondies Recipe: U.S. Chickpeas aren’t exactly the first thing that comes to mind when talking about baking. However, you’ll be surprised to know that U.S. Chickpeas (also known as garbanzos) are actually used as a healthier, gluten-free alternative to regular flour! With a bit of creativity, you can actually use chickpea flour to bake pizza, or even make desserts such as macaroons, tarts, and one of my recent favorites—blondies!
As you may have guessed, blondies are the lighter cousin of the brownies that we know and love (hence, the name). While brownies normally have cocoa powder and chocolates that give it its darker color, blondies instead have a richer vanilla flavoring. Learn how to make flourless, protein-packed U.S. Chickpea Blondies by following the recipe below.
U.S. Chickpea Blondies Recipe
Ingredients:
- 450 grams canned U.S. Chickpeas, drained and rinsed
- 2 tbsp peanut butter
- 3 tbsp canola or vegetable oil
- 1 ½ tsp vanilla extract
- 3 medium sized eggs
- ⅓ cup white sugar
- ⅓ cup brown sugar
- ½ tsp salt
- ½ tsp baking powder
- 90 grams white chocolate chunks
- Optional: Vanilla ice cream and caramel syrup
Procedure
- Put the U.S Chickpeas inside a food processor and pulse a few times until it becomes pulpy in texture.
- Add in the peanut butter, canola oil, vanilla, and pulse again until you get a smooth mix.
- Add the 3 eggs into the mixture and pulse again.
- In a separate bowl, mix the brown sugar, white sugar, salt, and baking powder.
- Add the dry ingredients to the chickpea mixture. Then add the white chocolate chunks and mix thoroughly.
- Line your pan with parchment paper and pour the chickpea mix.
- Preheat your oven to 175°C and bake for 30-35 minutes or until cooked. You’ll know that your blondies are done when they start to pull away from the sides and the edges are light brown.
- OPTIONAL: Serve topped with vanilla ice cream, and drizzled with caramel syrup!
The result? Nutty, protein-packed chickpea blondies—a healthier alternative to your usual dessert! The white chocolate chunks make the blondies more flavorful, but if you want an extra layer of sweetness, top your blondies with a scoop of ice cream drizzled with caramel syrup!
