Ooohhh I can still remember that crunch! It’s probably not the best looking pork belly cut around but oh my god, it’s perfectly seasoned that I had to get extra helpings of rice. And in case you’re wondering, yep I made this myself!
Here’s what I did to make that ASMR – worthy crispy pork belly! The key is to make sure you draw out the moisture from the rind.
After cleaning the pork, wipe it with a paper towel and prick small holes on the rind using a fork. You can use a sanitized needle or toothpick too!
Lightly rub salt on the rind. And to get that crunchy chicharon texture, rub some baking soda too. For the meat itself, I only seasoned it with salt and pepper.
Let the pork dry for a few hours – best to leave it in the fridge to completely draw out the moisture. Then bake or fry until golden brown.
