Excellence in Practice: Ducasse Institute Philippines Launches Chef de Partie Program at Enderun Colleges

I had the privilege of getting invited to the Press Conference and Student Interaction with world-renowned chef and restaurateur Alain Ducasse yesterday at Enderun Colleges. Aptly entitled “Excellence in Practice”, the event aimed to announce the new Ducasse Program at Enderun and of course, inspire aspiring chefs and students alike.
Arguably the most successful and most influential chef this generation has seen, Chef Alain Ducasse has 25 individual restaurants in 9 countries across 3 continents. He has three separate three-Michelin-star restaurants in three different cities – Le Louis XV in Monte Carlo, Alain Ducasse au Plaza Athénée in Paris and Alain Ducasse at The Dorchester in London. In 2013, The World’s 50 Best Restaurants List awarded him with the Lifetime Achievement Award. This award is voted by 900-plus international industry experts who make up the Diners Club World’s 50 Best Restaurants Academy.­ As Erwan Heussaff put it, Chef Ducasse is one “Rockstar Chef”.

DUCASSE INSTITUTE PHILIPPINES LAUNCHES CHEF DE PARTIE PROGRAM

One of the highlights of the event, was the announcement of Ducasse Institute’s Chef de Partie Program. Starting this June, culinary graduates and aspiring professional chefs can advance their career and train to acquire the skills expected of a Chef de Partie through the Diploma in Culinary Arts – Chef de Partie Program offered at Ducasse Institute Philippines at Enderun Colleges.
This intensive program matches the curriculum taught in Ducasse Education in France. Students will get the chance to train with the world-class chef instructors of Ducasse Institute Philippines. Lasting for six months, the program will include hands-on and theory classes, with a deeper focus on “Excellence in Practice” in order to optimize skills acquisition. The curriculum also includes lessons on mise-en-place, health and safety protocols, nutrition fundamentals, team management, and operations management, and students would even get the chance to have their internship abroad in one of Enderun’s 250 global industry partners.
