Ingredients

  • 1 cup rice
  • 2 tsbp olive oil extra virgin
  • 1 cup celery stalks chopped
  • 250 grams sweetened brick ham, sliced into cubes. (You may use smoked turkey breast as an alternative to pork, or use roasted tofu if you're vegan).
  • 1 tsp chili flakes
  • 1/2 cup white onion chopped
  • 300 grams salted U.S. black beans drained
  • 2 pcs bay leaves
  • 1/4 cup water
  • pinch of salt

Instructions

  • Cook the rice as you normally would. If you’re using Japanese rice, make sure to soak it first in water for 20-30 minutes before cooking in the rice cooker. This will make the rice fluffier and softer.
  • Heat the olive oil in a pan, then sauté the celery, white onion, and chili flakes, until they become translucent.
  • Add the cubed ham, salted U.S. black beans, water, and bay leaves. Cook for 10 more minutes, or until the ham starts to caramelize. Note: Smoked turkey breast is a good alternative to ham. If you want a vegan option, roasted tofu works too!
  • Add a pinch of salt to taste, then set aside.
  • Put the cooked rice in a large bowl. Make some space in the center, and add the beans and ham as toppings. Serve warm.
